Good friends of mine live near the slope of an active volcano in the western hemisphere’s second poorest nation – Nicaragua. On first glance, one might consider them deprived at seeing their humble abode. But they are actually very rich in love, faith, joy and generosity. They’ve discovered where true happiness resides in spite of many hardships endured in their beautiful nation.
On countless occasions over 20 years, I’ve had the privilege of sharing meals with them at their home. We’ve enjoyed feasts of home-cooked cuisine while sitting on simple plastic chairs arranged in a loose circle in the yard. With children laughing and dogs barking we’ve fellowshipped over Nicaraguan chicken stew and other typical platos.
Other times we’ve gone horseback riding in rural communities with the backdrop of volcanoes.
A quick meal while horseback riding was often fresh fruit along with some fried chicken rolled into a tortilla that had been seared over the fire that morning. It was topped with homemade pico de gallo.
Honest conversation and laughter were freely dispensed, filling my heart with joyful memories.
I’d like to share one of my favorite recipes that my friend in Nicaragua makes for me. This is her version of beefsteak with onions with a few added vegetables. I hope it will provide a delicious opportunity to warm your family’s tummies this fall season. It helps me remember that the simple things in life – like sharing a meal – sparkle more then precious gems.

Bistec Encebollado (Beefsteak with Onions) Nicaraguan style
1 pound of beef cut into small strips
2 Tbsp lime juice
2 cloves of garlic
Pinch of salt and pepper
4 Tbsp oil of your choice
3 large tomatoes
1 large onion
1 green and 1 red pepper
1 beef bouillon cube dissolved in three tablespoons of water.
Mix the beef with the marinade of lime juice, garlic, salt and pepper, and place in the refrigerator for 20 minutes. Slice the tomatoes and peppers and mix together in a large bowl. Set aside. Slice the onions and add to a large frying pan with 2 tablespoons of the oil. Cook until clear. Add the tomatoes and peppers and cook until the tomatoes are soft. Do not dry out.
Remove the marinated beef from the refrigerator and cook in the other two tablespoons of oil. Once the beef is done, add the bouillon cube mixed in water.
Add the vegetables to the beef mixture and cover. Simmer just a few minutes to meld the flavors. Serve over rice or quinoa. Enjoy!
